Fancy Garlic Bread
Ingredients
Ciabatta bread (store bought)
Skirt steak
Cheese spread
Feta cheese (in brine)
Black garlic - at least 1 head
Chimichurri
Raspberries
Chipotle peppers in adobo sauce (can)
Garlic
Parsley
Lemon juice
Scallion oil (optional if you want to be fancy but it’s worth it)
1 bunch of scallions
Neutral oil
Steps
1) Finely dice black garlic
2) Whisk about a cup of feta cheese and stream in a mixture of half brine half water until incorporated and the cheese loosens into a workable sauce. Mix in black garlic.
3) In an immersion blender or food processor, mix about equal parts chipotle peppers and raspberries and the juice of half a lemon, balance to taste, and add salt and pepper.
4) Finely chop parsley and garlic and incorporate into chimichurri and set aside.
5) Cook the skirt steak to the desired doneness, then let rest for about 10 minutes.
6) While the steak is resting, toast the ciabatta bread with butter or olive oil
7) Assemble all components.
8) Optional - Finely chop 1 bunch of scallions, fry in a neutral oil for about 30 seconds to 1 minute, until steam subsides
9) Blend until homogenous, then strain through a fine mesh strainer or cheese cloth, and add to dish
